1 can cream of chicken
1/2 cup sour cream
2 tbsp butter
1/2 cup chopped onion
1 tsp chili powder
2 cups cooked chicken, shredded
1 can (4oz) chopped green chilies
8 flour tortillas
2 cups monterey jack or cheddar cheese
1. Preheat oven to 375. In a bowl stir together soup and sour cream
2. In a sauce pan cook onion and chili powder in butter until onion is tender. Then, stir in chicken, chilies and 2 tablespoons of soup mixture. (I added more sour cream to this so it wasn't so dry)
3. To make enchiladas: spread about 1/4 cup of chicken mixture along center of tortilla. Fold sides and place in a large greased casserole dish. Do this to all 8 tortillas.
4. Once all tortillas are in dish spread remaining soup mixture over enchiladas. Cover with foil and bake 15 minutes. Then sprinkle with cheese and bake uncovered for 5 more minutes.
Here ya go....another easy recipe with some spice! 1 lb ground beef1 red pepper, chopped ( I only used about a handful of red pepper and onion)1 onion, chopped1 pkg taco seasoning1/2 cup water4 cups frozen cubed southern style hash browns2 cups frozen corn1/2 lb (8oz) Velveeta, cut into small cubes1. Heat oven to 350.2. Brown meat with peppers and onions in large skillet, drain. Return to skillet.3. Stir in taco mix and water. Add potatoes, corn, and Velveeta. 4. Mix well and spoon into a 13x9 baking dish.5. Cover dish and bake 20 minutes. 6. Stir, then bake 15 more minutes, uncovered. Whaaaaaala! Yummy easy dish.....
YUM...YUM...YUM! This is a great way to change up boring tacos and it is easy easy easy! 1 lb ground beef1/2 envelope of taco seasoning16oz can refried beans1/2 cup sour cream10 inch flour tortillas2 cups shredded cheddar cheese6 oz can sliced black olivesToppings of your choice: shredded lettuce, chopped tomatoes, sour cream, salsa1. Brown meat and drain.2. Stir in taco seasoning, beans, and sour cream. Cook till heated through.3. Place one tortilla on bottom of a pie pan or pizza pan. Spread 1/4 meat mixture over tortilla. Sprinkle with cheese and olives.4. Place another tortilla on top and repeat layers until you reach top of pan.5. Lastly place a tortilla on top and brush with vegetable oil for a crunchy top.6. Bake at 375 for 20-30 minutes.7. Slice into 4 - 6 wedges and serve with toppings of choice.
This is what the Willis' are having for dinner tonight! It's a nice healthy dish for the whole family.
1 lb ground turkey, cooked
1 box long grain wild rice (I use Uncle Ben's)
1 can cream of mushroom soup
1/3 cup milk
1/4 cup onion, chopped
2 1/4 cups boiling water
1. Combine all ingredients, including rice seasoning in a 2qt casserole dish and mix thoroughly
2. Cover and bake at 350 for 45-50 minutes, or until water is absorbed
3. Uncover and bake 15 more minutes
** Steamed broccoli and cheese go great with this yummy dish!
If you have kids...this recipe is a must! Since Colter has hit "toddler-hood" this casserole has become a staple in the Willis household. And I have also come to love it! 1 lb ground beef1 can cream of mushroom soup1/4 cup milk1-2 cups of frozen mixed vegetables1 cup shredded cheddar cheese1 bag of tator tots1. Brown meat in skillet and drain. Put meat back into skillet, then add soup and milk, and heat through.2. Spoon meat into an 8x8 (2 qt) baking dish.3. Cover meat mixture with frozen vegetables.4. Then add cheese and top with tator tots. You will not use all of the tator tots, but try to squeeze in as many as you can. 5. Bake at 375 for 45 minutes, or until tots are browned.** If you like serve it topped with ketchup....yummy!
Hey Ladies.....ribs are not just for men and their grills! Here is a very easy yummy rib recipe that will turn out great every time...
Rack of PORK ribs
1 bottle of your favorite bbq sauce (I buy anything that says "spicy" on it for ex Kraft Bold & Spicy)
Your favorite dry bbq seasoning (I use Rib Rub)
1. Preheat your oven to 350
2. Line a large pan with tin foil
3. Lay ribs in pan - bone side down
4. Sprinkle dry seasoning on ribs and rub in
5. Cover pan tightly with tin foil
6. Bake for 1 hour
7. At 1 hour drain pan and baste ribs with half of bbq sauce and cook for 15 minutes UNCOVERED
8. At 15 minutes baste with remaining bbq sauce and cook 15 more minutes UNCOVERED
I am now going to declare myself the Queen of Casseroles! If you didn't know that I love casseroles....well ya know now. There is nothing better than throwing all your favorite things in a dish and baking it until bubbly! This is one of my family's favorite dishes. So, for all you casserole lovers....have fun mixing and melting!!! 1 lb cooked chicken, cubed2 cans green beans, drained1 4oz jar pimentos, drained1 can cream of celery soup1 cup mayo1 6oz box long grain wild rice, cooked accordingly (I love the Uncle Ben's brand and it cooks in 5 minutes)1 cup shredded cheddar cheesepinch of salt1. Preheat oven to 3502. Mix all ingredients together in a large bowl3. Pour into 3qt casserole dish4. Bake 20-25 minutes or until bubbly
Phew that is a mouthful to say! But you don't have to say it...just eat it! This recipe looks as good as it tastes. It is simple and satisfying....and even better....it's easy!
2 cups penne pasta
1 package fresh spinach leaves (10oz)
1 lb boneless skinless chicken breasts, cut into bite size pieces
1 tsp dried basil leaves
1 jar of your favorite spaghetti sauce
1 can diced tomatoes, drained
2 oz of cream cheese
2 cups mozzarella cheese, divided
1-2 tbsp olive oil or vegetable oil (whatever you have in the pantry)
1. Heat oven to 375
2. Cook pasta, adding spinach to boiling water for the last minute
3. Heat oil in large skillet, then add chicken and basil, and cook until chicken is no longer pink
4. Add sauce, tomatoes, cream cheese, and 1 cup of mozzarella to skillet and cook until heated through
5. Drain pasta and spinach
6. Add the chicken mixture to the pasta and mix well
7. Spoon into a 2 qt baking dish and bake for 20 minutes
8. Add remaining cup of mozzarella cheese to the top and bake 5 more minutes
That's it....yum! And if you want to add even MORE cheese you can sprinkle the top with parmesan!!!
This is my mom's recipe and one of my favorites! I love to cook it and even more....I love to eat it! It is very hard to get a recipe from my mom...anything she makes is in her head, she always changes up her dishes, and unlike me she never measures anything....it's a handful of this and a pinch of that. But I was able to hold her down and make her write out this recipe for me...thanks mom! 2 lbs ground hamburger1/4 cup chopped onion (or as much or as little as you like)1/4 cup chopped bell pepper (again, as much or as little as you like)1 can Rotel1 egg1 cup Progresso Italian Bread Crumbs1/2 cup parmesan cheese1/2 - 1 tbsp black pepper1. Mix all ingredients except Rotel in a large bowl2. Put mixture into a pan and form into a loaf. Don't make the loaf to tall or it will take longer to cook.3. Pour the entire can of Rotel over the meatloaf4. Bake uncovered at 350 for 1 hour or until cooked all the way through** For an easy clean up cover your pan with tin foil **
Here is a quickie! I did this tonight last minute and it turned out great. You can spice up this meal with some jalapenos or take them out to tone it down. We like it spicy at my house!!!
1 tbsp vegetable oil (only use this if you are going to add the japs)
1 jalapeno pepper, seeded and minced or you can chop up some pickled japs (optional)
1 lb ground turkey
1 package (16 oz) frozen mixed vegetables
1/4 - 1/2 tsp dried thyme leaves
1/2 tsp pepper
2 cans golden mushroom soup
1 package of refrigerated breadsticks
1. Preheat oven to 350
2. If using japs, then heat oil in skillet and add japs and cook about 5 minutes or until tender.
3. Add turkey to the same skillet and cook until no longer pink. If you are NOT using the japs then just cook the turkey in skillet with out the oil and continue to step 4.
4. Stir in vegetables, thyme, and pepper. Cook 5 minutes or until vegetables are thawed.
5. Stir in soup and cook until heated through.
6. Spoon turkey mixture into a greased 13x9 casserole dish. Pull and stretch breadsticks across baking dish in a lattice pattern. Bake 15-20 minutes or until breadsticks are golden.
And whaaaa la! YOU have a zesty turkey pot pie!! If you are serving this to little ones you will probably want to leave out the japs. Colter loved this dish....good thing, because it looks like he will be having it a few more times!!!
If you like slow cookn' here is the perfect little recipe! We had this last night and had NO leftovers! Easy cooking and easy clean up....just my style....
Creamy Italian Chicken
1 lb boneless chicken breasts
1 envelope dry italian salad dressing mix
1/4 cup water
1 package cream cheese, softened
1 can cream of chicken
4 oz can mushroom stems and pieces, drained
1. Place chicken in slow cooker. Mix salad dressing and water. Pour over chicken.
2. Cover and cook on low for 3 hours.
3. Mix cream cheese, soup, and mushrooms in a small bowl. Pour over chicken.
4. Cover and cook on low for 1 more hour.
5. When finished cooking remove chicken from sauce and shred. Put chicken back in sauce.
** Serve over your favorite cooked noodles!
** If you do a lot of slow cooking...the plastic bags for your slow cooker are your best friend!!!
