Campfire Potatoes

You don't need a camp or a fire for this...just an oven and taters! These are really simple potatoes that everyone will love! For this recipe you can just eyeball the measurements depending on what you like.

Potatoes (peeled and chopped into bite size pieces)
Vegetable oil
Salt
Pepper
Garlic powder
Cayenne pepper (if you like things a little spicy)
1-2 cups shredded cheddar cheese
Bacon bits
Sour cream (8oz)

1. Boil potatoes 5-10 minutes (don't over cook, just barely tender) You can skip this and just bake potatoes longer if you want them to be crunchy...I like them a little more soft

2. Season potatoes with above ingredients or your favorite seasonings. Don't be scared...you can't really mess this up...so go ahead get season crazy!

3. Drizzle potatoes with oil

4. Bake at 400 for about 20 minutes, or until potatoes are browning and crispy

5. Cover potatoes with cheese and bacon bits (again use as much as you like) put back in oven until cheese is melted

6. Lastly, if you like sour cream place dollops over potatoes

  1. hello...you told me olive oil...and to chop them up and leave the peel if they're red taters...I'm getting grumpy in my old age! heee hee
